"The goal is to have a mix of approximately 20 percent corporate locations for the concept's first five years," says Collins. The company will be opening locations in Boca Raton, Jupiter and Davie, Florida, this month. I Heart Mac and Cheese also has locations under construction in Syos- set, Bayside and Patchogue, New York. "We are in negotiations for new locations in Charlotte, North Carolina, and many areas in Texas," says Collins. "We hope to be coming to a location close to everyone out there." The concept also has restaurants under construction near colleges including the University of Central Florida in Orlando; Florida State University in Tallahassee; Auburn University in Auburn, Alabama; the University of Georgia in Athens; and Syracuse University in Syracuse, New York. "We know the college kids love us, and our simple operation fits well across from or on college campuses," says Collins. "We can adapt to food courts, non-tradi- tional locations and sports venues, as well as traditional strip center locations." The company typically signs develop- ment agreements for five or more loca- tions in an area. "We find that operators want to own the territory and not worry about encroachment from other fran- chisees," says Collins. "Our low initial investment also plays a part. Ultimately, we want every franchisee to have the opportunity to hit a home run with each location."
